Ingredients
  • 15g kelp noodles (i used Sea Tangle ones)
  • 30g fennel, chopped
  • 20g broccoli florets, chopped
  • 30g olive oil for frying
  • 100g broth
  • 2-3 quil eggs, boiled
Directions
  • Step 1 Boil the quil egss, set aside.
  • Step 2 Slightly cook chopped fennel with half of the olive oil in a small pot. Then add broth, brokkoli and noodles.
  • Step 3 Let the soup simmer for 2 minutes. The veggies have to stay somewhat crunchy and remain bright colour.
  • Step 4 Garnish with fried shrimps and quail eggs.
