Keto buns

I adjusted the classical keto bun recipe a bit and substituted half of the almond flour with ground golden flaxseed. This way it tastes more like whole grain white bread. NB! These buns are low in fat. If you spread 10g of butter to one bun, the fat percentage will be then 77%. 15g of butter will make fat percentage 80%.
Ingredients
- 80g almond flour
- 80g ground golden flaxseed
- 25g psyllium husk powder
- 5g baking powder
- 4g baking soda
- 3g salt
- 4 egg whites (140g)
- 1 egg yolk
- 1 tbsp (apple) cider vinegar
- 200g/ml hot water
Directions
- Step 1 Preheat the oven to 175C.
- Step 2 Mix all dry ingredients together, then mix in egg whites together with yolk and apple cider vinegar.
- Step 3 Finally add hot water and mix into even dough.
- Step 4 Form round balls (I make 6 pieces) and garnish with sesame seeds.
- Step 5 Bake for 45 minutes.
- Step 6 Serve with butter.

Food, whatever kind, has to have three important components for me- it has to look good, it has to taste good and it has to be good for the body and soul! I started out writing down the recipes for me and my family, so it would be easy and fun for us to figure out what to cook tonight. Maybe you, who you are peeking through my kitchen door in this blog, will find little inspiration, too!
