Oven baked keto omelet with veggies

Ingredients
- 8 eggs
- 50ml vegetable cream ( i used oat cream)
- 1/ tsp baking powder
- 1 onion
- 1 cup cauliflower
- 1 cup mushrooms
- 1 cup leafy greens (kale, spinach etc)
- 30g olive oil
- Salt, pepper, chilli flakes
- (Goat)cheese for topping (200g)
- Fresh herbs for topping- dill and parsley
Directions
- Step 1 Chop vegetables and fry them slightly in generous olive oil, season and spread onto the oven mold. Whisk eggs with cream and baking soda and pour onto the veggies.
- Step 2 Bake 175C about 30 min, until the crust gets golden. I added some fresh goat cheese on top of the omelet 5 min before getting it out of the oven.
