Ingredients
  • Pancakes:
  • 1 egg
  • 60g ricotta, cottage cheese or farmer cheese
  • 20g coconut or almond flour
  • 10g FiberFin (resistant potato starch) or bit of xantan gum or psyllium husk powder if you do not have it.
  • Pinch of salt and lemon zest to taste
  • 30g butter or ghee for frying

  • Jam:
  • 20g fresh or frozen berries
  • 10g coconut or MCT oil
  • 10g sweetener (i use erythritol)
Directions
  • Step 1 For the pancakes whisk the egg, add curd, flours and seasoning. Fry small pancakes (1 tbsp of batter) with butter on medium heat until golden brown from both sides.
  • Step 2 For the jam puree the berries with oil and sugar. If you use frozen berries, the jam will turn into sorbet 🙂
  • Step 3 Garnish with berries and erythritol icing sugar
