Keto syrniki- delicious curd pancakes

Ingredients
- Pancakes:
- 1 egg
- 60g ricotta, cottage cheese or farmer cheese
- 20g coconut or almond flour
- 10g FiberFin (resistant potato starch) or bit of xantan gum or psyllium husk powder if you do not have it.
- Pinch of salt and lemon zest to taste
- 30g butter or ghee for frying
Jam:- 20g fresh or frozen berries
- 10g coconut or MCT oil
- 10g sweetener (i use erythritol)
Directions
- Step 1 For the pancakes whisk the egg, add curd, flours and seasoning. Fry small pancakes (1 tbsp of batter) with butter on medium heat until golden brown from both sides.
- Step 2 For the jam puree the berries with oil and sugar. If you use frozen berries, the jam will turn into sorbet 🙂
- Step 3 Garnish with berries and erythritol icing sugar

I started out writing down the recipes for me and my family, so it would be easy and fun for us to figure out what to cook tonight.
