Keto potato salad

Ingredients
- 4 eggs
- 300g cauliflower
- 80g cucumber
- 80g pickles
- 50g celery
- 150g (organic) mayo (i use 80% fat mayo) or Hellmanns Original e.g.
- 5g strong mustard
- 20g fresh herbs (parsley, spring onion, dill)
- Salt and pepper to taste
Directions
- Step 1 Prepare the cauliflower by cutting into bite-sized pieces. Steam for 2-3 minutes (they have to stay half-crunchy). Drain and set aside to cool.
- Step 2 Boil the eggs 10 min, cool and chop. Mix into the cauliflower chunks in a large bowl along with chopped cucumbers, pickles, celery and herbs.
- Step 3 Add mayo, mustard, salt and pepper and herbs to the cauliflower mixture and stir to coat. Chill overnight and serve.
