  • 4 egg yolks
  • 50g ghee or butter
  • 50g creamy coconut butter
  • 70g coconut chips
  • 50g pecan nuts
  • 50g (blanched) almonds
  • 40g erythritol (or some other low carb natural sweetener)
  • Fresh lemon zest and pinch of salt to taste
  • Step 1 Whisk together egg yolks, melted ghee and coconut butter, season with sweetener, lemon zest and salt. Add coconut chips and crushed nuts.
  • Step 2 Drop 1 tbl spoon of dough onto ungreased cookie sheets. Bake 165C 15 minutes for a chewy cookie or 20 minutes for a more crisp cookie.
