Ingredients
- 4 egg yolks
- 50g ghee or butter
- 50g creamy coconut butter
- 70g coconut chips
- 50g pecan nuts
- 50g (blanched) almonds
- 40g erythritol (or some other low carb natural sweetener)
- Fresh lemon zest and pinch of salt to taste
Directions
- Step 1 Whisk together egg yolks, melted ghee and coconut butter, season with sweetener, lemon zest and salt. Add coconut chips and crushed nuts.
- Step 2 Drop 1 tbl spoon of dough onto ungreased cookie sheets. Bake 165C 15 minutes for a chewy cookie or 20 minutes for a more crisp cookie.
